We may not have any clients to feed but there is aways someone on the farm wanting food – and they don’t even know it’s lockdown !!

Quick, easy, nutritious recipes for all

Vegetable Corn Fritters – a great way to include a ton of vegetables into your lunch. Grate 500g of vegetables (kumara, courgette, spinach, pumpkin, potato, carrot – whatever you have) Whisk together 2 eggs and 120ml milk together, gradually whisk in 100g self raising flour until smooth and combined. Stir through 400g tin of drained corn kernals and grated vegetables of your choice. Cook in frying pan over a medium high heat for approx 3 mins each side. Can be made ahead of time and reheated or double the recipe and freeze extras for a later date.

Burger Patties – homemade burger patties are always a winner. Add grated carrot for sweetness, garlic, onion, tomato paste or chutney and soya sauce for seasoning.

Steamed Dumplings – a great back stop to have in your freezer. Available from Fruit World or supermarket. Steam over boiling water and serve with soya sauce.

Popcorn – grab some corn kernals and pop your own instead of chips. Pop your corn and while it is warm in the pot choose your flavour – sprinkle with parmesan, smoked paprika, curry powder, taco seasoning. Your imagination is the limit. One of our favourites is Caramel Bacon Popcorn……….

Homemade Pies – buy pre rolled flakey pastry and fill with your choice of filling. It is amazing what children will eat if put between pasty. Our chickens are laying so bacon and egg pie has been on the menu this week.

Sandwiches – grab some fresh bread and go for gold. There are no restrictions as to what you can add.
